Tart Berry Oatmeal Bake

Get into the holiday spirit with this vegan, blend-based Tart Berry Oatmeal Bake! A healthy and delicious alternative to your favorite baked good, and packed with vitamin C and naturally occurring enzymes. Here’s what you’ll need!
 

Ingredients

Almond Crisp:

  • ⅓ cup rolled oats
  • ⅓ cup sliced almonds
  • ⅓ cup brown sugar
  • 1 tbsp flour
  • ¼ tsp cinnamon
  • 2 tbsp vegan butter, melted
  • Pinch of salt

Oatmeal Bake:

  • 1 Tart Berry Vejo Blend
  • 1 ⅔ cup almond milk
  • Flax egg or 1 egg
  • ¼ tsp salt
  • 3 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 ¼ cup rolled oats
  • Handful of mixed berries, fresh

Directions:

  1. Preheat the oven to 350°. Spray an 8x8” pan with nonstick cooking spray.
  2. In a small bowl, mix together all the ingredients for the crisp and set aside.
  3. Make your flax egg and set aside.
  4. Using your Vejo blender, blend the tart berry blend with almond milk.
  5. In a medium bowl, whisk together the tart berry almond smoothie, flax egg, brown sugar, and vanilla extract.
  6. Stir in oats.
  7. Pour oatmeal mixture into the prepared pan. Sprinkle the crisp mixture and mixed berries over top.
  8. Bake for 50 minutes or until golden brown.
  9. Serve with fresh berries or non-dairy yogurt.

Banana Almond Pancakes

Elevate your favorite Sunday-morning staple with our decadent Banana Almond blend. Packed with 7 grams of protein and dietary fiber, these Banana Almond pancakes will satisfy your sweet tooth and help you feel energized for the day!

Ingredients:

  • 1 Banana Almond Vejo Blend
  • 1 cup almond milk
  • 1 overripe banana
  • 1 tsp vanilla extract
  • ½ cup almond flour
  • ½ cup oat flour
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • Pinch of salt
  • 1 tbsp avocado oil, for skillet

Directions:

  1. Using the Vejo blender, fill the blender with almond milk to the fill line, about 1 cup. Insert the banana almond blend and twist top to blend.
  2. In a medium bowl, mash the banana until creamy and smooth. Combine the banana almond smoothie and vanilla, mix well.
  3. Add the flours, baking powder, cinnamon and salt. Mix until combined.
  4. Over medium heat, add oil to the skillet. Using a ¼ measuring cup, scoop and pour batter onto the hot skillet. Cook until golden brown on each side.
  5. Serve with banana slices and maple syrup.
